Easy Greek Pastitsio
- 2 tbs Woolworths extra virgin olive oil
- 2 tbs dried breadcrumbs
- 250g macaroni
- 1 brown onion, finely chopped
- 3 garlic cloves, crushed
- 500g Woolworths lean beef mince
- 400g jar Basilico tomato pasta sauce
- 700g tub fresh creamy carbonara sauce
- 3 free range eggs
- 1/3 cup finely grated parmesan (plus extra to serve)
- continental parsley leaves (to serve)
- salad leaves (to serve)
Step 1 of 4
Preheat oven to 220°C/200°C fan-forced. Brush a 20 x 26cm (6cm deep) ovenproof dish with 1 tbs oil. Add breadcrumbs to dish and shake to coat base of dish.

Cook pasta in a saucepan of boiling, salted water according to packet instructions. Drain. Return pasta to pan.

Meanwhile, heat remaining oil in a large frying pan over medium-high heat. Cook onion, garlic and mince, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add pasta sauce and bring to the boil. Remove pan from heat.

Meanwhile, whisk carbonara sauce and eggs in a bowl. Add half the carbonara sauce mixture to pasta and stir to coat. Spoon into dish, pressing lightly to compact. Top with mince mixture, then carbonara sauce mixture. Scatter over parmesan. Bake, uncovered, for 20 minutes or until golden. Top with extra parmesan and parsley, and serve with salad leaves.
