Avocado, Rocket & Charred Lemon Salad
- 2 avocados
- 2 lemons
- 120g baby rocket leaves
- 1/4 cup olive oil
- 1/2 cup macadamia nuts
Step 1 of 4
Preheat oven to 180°C. Line a baking tray with baking paper. Cut 1 lemon into 3mm-thick slices, toss with 1 tbs oil and season with salt and pepper. Lay in a single layer on tray and bake for 15 minutes, turning halfway, or until lightly charred in spots and caramelised. Transfer to a plate and set aside to cool.

Re-line tray and add macadamias. Bake for 4 minutes or until golden. Set aside to cool completely.

Meanwhile, to make the dressing, juice remaining lemon and whisk with remaining oil in a small bowl until combined. Season.
Step 4 of 4
In a large bowl, toss rocket, lemon slices and half the dressing. Arrange on a platter with avocado and macadamias. Drizzle over remaining dressing and serve.
